WHAT’S COOKIN’ IN YOUR KITCHEN – RANDOM RECIPES – BIRDIE’S SWEET DINNER ROLLS
I like to cook. And I like to invent my own recipes. And I like to try other people’s recipes. And now I’m going to share them with you.
BIRDIE’S
SWEET DINNER ROLLS
INGREDIENTS
2/3 cup white sugar
4 eggs, beaten
1 cup milk, scalded
¾ cup melted butter (1 ½ sticks)
1 cup warm water (110° degrees)
½ cup white sugar
2 packs active dry yeast
7+ cups bread flour, sifted
2 tsp salt
2 TBS olive oil
2 TBS melted butter
DIRECTIONS
- Crack eggs into a mixer bowl and set mixer to whip on low, increasing speed slowly.
- Scald milk in pourable measuring cup; set aside.
- Melt butter in pourable measuring cup; set aside.
- Heat water until warm to the touch. Add sugar and stir, then add yeast and stir. Set in warm place. (I set it in the microwave.)
- Add sugar to eggs. Continue whisking.
- Slowly add milk. Continue whisking.
- Remove yeast from microwave and slowly add to egg mixture. Continue whisking.
- Stop mixer and add 1 cup of flour and the salt. Continue mixing on low speed.
- Continue adding flour, 1 cup at a time, until your mixer will no longer handle the gluten.
- Continue adding flour and mix by hand.
- Turn onto a well-floured surface and knead for several minutes.
- Grease a large bowl with the oil. Place dough in the bowl, smooth side down, then turn so the smooth side is on top.
- Let rise for 30 – 40 minutes in a warm, damp place. rem trick: I set a 2 cup glass dish in the microwave for 3 – 5 minutes while I’m preparing the dough, creating a perfect environment to proof the dough.)
- Turn dough onto the well-floured surface and knead for several minutes, being sure to let it stretch.
- Divide dough evenly into 24 rolls, kneading each one gently before placing on a baking sheet, smooth side up.
- Let the rolls rise another 30 – 40 minutes.
- Preheat oven to 350°
- Using a pastry brush, spread the melted butter over the top of the rolls and place in oven.
- Bake for 15 minutes, or until tops are golden brown.
- Optional: Brush with another 2 tablespoons of melted butter.
Serve with butter and honey or jelly.
